01 - Preheat oven to 400°F and lightly grease a medium baking dish with olive oil
02 - Heat 2 tbsp olive oil in a large skillet over medium heat. Add onions and cook until translucent, about 3 minutes
03 - Stir in garlic and cook for 1 minute until fragrant
04 - Add sun-dried tomatoes and spinach. Sauté until spinach is wilted, about 2 minutes
05 - Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, Italian herbs, red pepper flakes, salt, and black pepper. Simmer for 2-3 minutes until slightly thickened
06 - Add shrimp to the skillet, stirring to coat thoroughly with sauce. Remove from heat
07 - Transfer mixture to prepared baking dish and top with shredded mozzarella
08 - Bake uncovered for 15-18 minutes until shrimp are pink and cheese is melted and bubbly
09 - Serve hot, garnished with extra Parmesan or chopped parsley if desired
