01 - In a medium bowl or mason jar, add rolled oats, coconut milk, Greek yogurt, chia seeds, maple syrup, shredded coconut, vanilla extract, and almond extract if using. Mix thoroughly until all ingredients are evenly incorporated.
02 - Cover the container tightly and place in the refrigerator for a minimum of 8 hours, ideally overnight. This allows the oats to soften completely and the flavors to develop fully.
03 - Remove from refrigeration and stir well. If the mixture appears too thick, add additional coconut milk 1 tablespoon at a time until desired consistency is reached.
04 - Divide the oat mixture evenly between two serving bowls or jars. Top each portion with toasted coconut flakes, chopped toasted pecans or almonds, and fresh banana slices if desired.
05 - Serve immediately while cold. No additional heating required.
